2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced carrots
1/2 cup frozen peas
2 cloves garlic, minced
2 eggs, beaten
3 tablespoons soy sauce
1/2 teaspoon sesame oil (optional)
Salt and pepper to taste
Green onions, chopped (for garnish)
Instructions:
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the diced onion and carrots to the skillet. Stir-fry for about 2-3 minutes until they start to soften.
Push the vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until they are cooked through, breaking them into small pieces with a spatula.
Add the minced garlic and frozen peas to the skillet. Stir-fry for another 1-2 minutes until the peas are heated through.
Add the cooked and cooled rice to the skillet. Use a spatula to break up any clumps and evenly distribute the rice with the other ingredients.
Pour the soy sauce (and sesame oil, if using) over the rice and stir-fry for an additional 2-3 minutes until everything is well combined and heated through. Season with salt and pepper to taste.
Remove the skillet from heat, garnish with chopped green onions, and serve ok now that I'm done"
